Golden Cardamon Cake
Ingredients:
1 cup soy milk
1 tablespoon apple cider vinegar
4 tablespoons ground flax or flax meal
10 tablespoons warm water
12 tablespoons of vegan butter
1.5 cups of white sugar
4 tsp baking powder
1.5 tsp vanilla extract
2.5 cups all-purpose flour
½ tsp ground cardamom
½ tsp Kola Goodies Golden Glow (w/ notes of nutmeg and turmeric)
For Saffron Buttercream:
1 pinch of saffron threads
1.5 tbsp warm soy milk
¾ cups vegan butter
3 cups powdered sugar
Instructions:
Start with cake batter:
- Make flax egg by combining warm water with flax meal and set aside to let it develop
- Add apple cider vinegar to the soy milk to let curdle, and set aside
- Mix flour with baking powder, cardamom, Golden Glow Mix and set aside
- Cream sugar with vegan butter on high speed until fluffy
- Add vanilla extract to butter, then add flax egg, and whip again until fluffy
- Add a little of the flour mix, then a little of the curdled milk mix, and incorporate, and repeat until all the flour and milk is incorporated (do not over mix!)
- Pour in 2 - 8” greased pans, or put all the batter in one greased pan (and then cut in half into two cakes later), and bake for 30 minutes at 350F until a toothpick comes out clean- let cool
Make the saffron buttercream:
- Steep the saffron threads in warm milk and set aside
- Whip vegan butter until fluffy, then slowly add sugar bit by bit and whip until fluffy and in a frosting texture
- Add saffron milk and whip one last time - then ice your cake
- Top with dried rose petals and chopped pistachios, and enjoy!
